Its fruit can be processed into several products such as canned pineapple slices, pineapple pulp, dried pineapple, pasteurized pineapple juice, and concentrate. Fresh pineapple juice is a popular product due to its pleasant aroma, avor, and numerous functional properties [1]. Pineapple juice satises the “5 A Day” dietary requirement of fruits and vegetables set by many health agencies [2]. Pineapple juice contains a variety of minerals, especially manganese, as well as amino acids, various sugars, vitamins, and polyphenols [3].
